In honor of National Bacon Day, Alex Navarro took one of our favorite meatball recipes and made it even better with the savory addition of bacon bits! These meatballs are an easy ultra-low carb dish that are fabulous on their own and even better with a little sauce and melted cheese! Double up the recipe for leftovers and an easy take-to-the-office lunch. If you leave off the sauce, no forks are required!

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
  2. Arrange bacon slices on baking sheet and bake until crisp, about 8-10 minutes. Let cool on a cutting board and chop up into bacon bites.
  3. In a large bowl, mix together the ground meat, Worcestershire sauce, almond flour, egg, garlic salt, pepper and bacon bits.
  4. Form 16 meatballs and arrange them on the baking sheet. Bake until cooked through, about 10-15 minutes. Remove from oven.
  5. Turn oven to broil.
  6. In a large sauce pan or oven proof casserole dish arrange meatballs in a single layer.
  7. Pour the marinara sauce over the meatballs so they are evenly covered.
  8. Lay a small slice on mozzarella on top of each meatball.
  9. Place casserole dish under broiler for 2-3 minutes or until cheese is melted and slightly bubbly.
