Ultra Low Carb Pepperoni Pizza Nachos

Ingredients

Instructions

  1. Set oven to broil.
  2. Line baking sheet with aluminum foil.
  3. Place two paper towels on a microwave-safe plate.
  4. Arrange pepperoni sliced in a single layer on plate. Cover with another paper towel.
  5. Microwave on high for 1 minute. Remove from microwave. Push down on chips, soaking up excess grease.
  6. When pepperoni slices are crisp, arrange in a single layer on baking sheet.
  7. Spoon a small dollop of Marinara sauce on top of pepperoni slices.
  8. Sprinkle cheese on top of sauce.
  9. Place under broiler for 1-2 minutes or until cheese begins to melt.
  10. Remove from oven.
  11. Evenly distribute diced jalapeno on top of cheese.
  12. Place one black olive on top of jalapenos.

Recipe Notes


Just a tip on preparation - avoid putting too much sauce on each pepperoni slice, otherwise you'll end up with a soggy chip which is a Nacho-fail!
