Pork rinds are one of our favorite ultra low carb snacks
That’s why it’s always stocked in the Fit Living Foodies pantry. And more often than not we dip them in some basic salsa fresca or the occasional home-made guacamole. But we wanted something a little extra special for a holiday appetizer. And so we bring you this Chorizo and Mushroom Queso Dip! Chorizo is one of those things that you either love or could care less about. We happen to be fans of it, especially when there is cheese involved! They just go so well together. I originally thought I would just dollop some fresh chorizo on top of the cheesy dip, but then I saw another recipe that mixed it right in. It only made sense to add a few more things to mix to give it some texture and heartiness, which is where the mushrooms come in!
It’s quick and easy…
I opted away from adding extra cream (or milk of course) which normally helps in the smoothness and creaminess of the cheese dip, because I wanted something quick and easy. When cream is added in it takes more baby-sitting and timing, which I know most of don’t have time for these days. So I left it out and hoped for the best. Score! It’s definitely best gobbled up soon after it’s taken out of the oven, while the cheese is still bubbly and the chorizo is hot! Just be careful not to burn the roof of your mouth while trying to scoop up the cheesy-chorizoness…we should know…we did it 🙁
Whatever vessel you serve it up with – Chicharones, tortilla chips, or celery sticks – it’ll be a hit!
This recipe is really easy and well worth the little time it takes to whip together. So whether you’re making it for yourself, or your next get together, we’re sure it’ll be a hit. And feel free to add a side of “normal” tortilla chips for those friends or family members who aren’t fans of chicharones. It’s even tasty with celery sticks or bacon chips!! Wait…is that too much pork?!?! Impossible!
