A drink to warm you from the inside out…
We often get asked if we drink alcohol while following The Carb Nite Solution® or Carb Back-loading™. The simple answer is yes, yes we do! It’s not an everyday occurrence by any means, but we do enjoy the occasional adult beverage, especially for special occasions.
I personally prefer saving any cocktails for my actual Carb Nites, but that doesn’t always work out. So we’re sharing a few adult beverages that Mary and I love and feel are fitting for the occasion. The first drink is this Tequila Mint Hot Chocolate and it’s perfect for a cold Winter night. There’s something very satisfying about a warm, sweet drink with a kick that’s sure to heat up any cold night. My first experience with a warm cocktail was sipping on a Hot Toddy for my birthday a few years back. I had come down with a terrible sore throat and it really hit the spot. After that night I was intrigued by other warm cocktails and tried a few variations with hot chocolate.
We like to stick with the clears
I’m a chocolate kind of girl, so the hot chocolate just made sense. Plus, I knew how easily it would be to make it ultra low carb. The only piece I wasn’t sure about was the type of alcohol to add in. I’ve never really been a fan of “brown” booze (it sounds funny when I say it out loud, lol), and always have better luck with clear alcohols like vodka and tequila. So I stuck with what I knew and liked and I think it worked out really well!
The addition of mint extract gave it that extra something special and complimented the tequila really well. Come to think of it…So Delicious Coconut Milk makes a version that’s Mint Chocolate! And if I remember correctly it was fairly low carb and don’t think it had any added sugar to it. Hmmm…I don’t remember seeing it often on the shelves of my local grocery store, but if you happen to find some it might work perfectly with this recipe! All you’d need to add is the whipped cream. Talk about easy!

But if for some reason you can’t get your hands on that brand or flavor, the recipe below is really easy and we’re sure you’ll like it. You could easily make a child-friendly version of this recipe too by simply omitting the booze. Now everyone in the family can enjoy a delicious, ultra low carb sweet beverage on any of these cold Winter nights.
